    I got this knife as a wedding gift 7 years ago in a set and have been using it every day…at least twice a day and it is just the best! Only after 6 years did I need to use a stone to sharpen them. I really only needed the sharpening steel. I love to cook and this knife makes prep easier and faster. It is well balanced and solid to hold without being too heavy. The only thing i noticed about the blade is that when i slice turmeric it sometimes stains the blade…but it comes out after 3 days or so of using and washing (hand wash only). I highly recommend this knife.

    The 8″ chef knife is an absolute joy to use in the kitchen. It actually makes prep work enjoyable. Chopping, slicing, dicing, etc. are now effortless. It’s razor sharp and stays honed that way for quite sometime under heavy use. I am very good at maintaing its edge by hand, and its high quality carbon steel blade lends itself perfectly to this task compared to stainless steel blades. If you purchase a quality knife such as this, it is imperative that you maintain its edge preferably via manual sharpining or with an electric sharpener.

    I recently purchased this knife and am overjoyed with the performance. If you don’t have a well balanced professional knife you can’t imagine how nice it is to work with one. I went to the local restaurant supply stores and handled several brands and sizes to see what felt best. The Henckels Pro S 8″ was the best. The 10″ seemed top heavy but I’m sure someone else may feel different. The blade holds an incredible edge as well. I steel the blade before each use to keep the edge in the best cutting condition.

    We live on our boat and don’t leave the Cuisinart on the galley counter. I found that there is little reason to break out the Cuisinart unless I have a large amount of food to process. The 8 inch Pro S has stayed sharp and in the year I have owned it have only used the honing steel to keep the knife in perfect condition. Use a plastic or wood cutting board and use the steel and enjoy this fine knife. I plan to buy the six inch model soon.

    You can spend a lot more on a knife, but you won’t buy any better performance where it counts, in the kitchen. Made of sharpenable stainless with a synthetic handle that will never loosen or break apart, this knife has a nice heft and a good edge and should last most home chefs a lifetime. Give it a few strokes with the steel every time you use it and the edge will last for years without needing to see a sharpening stone.

    If your cutlery drawer is full of various inexpensive supermarket blades, “miracle” knives and the like, throw them all out and buy one decent blade like this, and you may be amazed how versatile a simple, quality knife can be.

    I was a professional chef for over 15 years and have owned this particular knife for 26 years. I still use it daily at home and for work. The weight and balance are just right. It is extremely versatile and can handle any job from fine chopping to thin slicing as well as preping fish and meats. I have only had to have it sharpened 6 times as I like to keep an extra fine edge or I had nicked it. Otherwise if you take proper care of this knife eg: never put it anywhere but on the cutting board or back in its sheath, you will only need to use the sharpening steel to keep a sharp edge.

    I finally decided to get top quality knife, to replace my Chicago Cutlery 8″

    chefs knife (I got tired of sharpening it every other week).

    It was supposed to come 5 days after it shipped, but I got it in two, it came in a nice black box, sharp and ready for work.

    So far I can tell you it is worth every penny, now I can do large volume of work with little effort. Chopping, dicing, slicing etc is easy due to the heftiness and sharpness of the knife. I remember watching a video on YouTube of some guy slicing a piece of paper in very thin horizontal strips with a Shun, well let me tell you that this knife can do the same with ease.

    The handle is very comfortable for me, I have large hands, but it fits perfectly well in them.

    Blade is about 2 ” wide, very sharp and can cut through anything with ease, for example I was able to cut onions in almost transparently thin slices. The heftiness helps a lot with cutting and when doing big volume jobs because it saves effort pushing down with the knife.

    Balance is great,when I hold the knife with the pinch grip with two fingers right before the bolster it maintains perfect horizontal position. Size is also good, I didn’t really expect it to have a mini-sword like look, but the definitely impresses.

    Overall great knife well made and balanced, now I regret I didn’t buy this in the first place but went for cheaper brand.

    I bought this for my husband, who is a chef, for a Christmas gift. He LOVES it! It is a HUGE knife, but he has big hands and it fits him perfectly. I would say that it is most suitable for someone with a large hand. I also bought the diamond steel that is sold by the same company, and he says that it works great to keep the edge on the knife.

    I’ve had one of these knives for about a year and look forward to using it everytime I cook. Chopping is no longer a chore, it’s entertainment, as this knife slices and dices like no other. It’s nice and tall, so even with my large hands I can easily rock it and dice without hitting my knuckles on the cutting board. The blade is heavy and maintains an edge well, though I recommend getting an electronic sharpener to keep it perfectly honed. It is well balanced and the handle is comfortable.

    This really is the Mercedes Benz of knives, and although the cost is high, I trust it will last me for many decades to come. Worth every penny, and puts a smile on my face everytime I use it.

    Henckels Twin Pro-S Chef’s knifes are a staple in my kitchen. The 6 inch knife blade is my favorite. It is easy to hold, the weight and balance make preparing meals enjoyable and I feel like a professional. The edge stays sharp – Even though I should sharpen it more often than I do.
